Start of Week 3…Yikes it’s November

Yikes, only 18 days until Thanksgiving!!  Now, that we have hit November, everything just happens so fast, shopping, parties, family gatherings, aghhhh…..it stresses me out!  Sometimes I don’t know how we keep our heads above water, but somehow we do!  I think I might lose my head one of these days, especially when I am mistaking mouse droppings in my car for chocolate sprinkles!  Yep, I said it, I thought there were sprinkles in Emma’s carseat and they ended up being mouse poop!  CRAZY!!  Needless to say, the car got a good cleaning when I got home on Tuesday!!

For the 9:10 am ladies—-Friday’s November 9th, 9:10 class will be moved to Wednesday, November 7th at 9:10!!  I have to go to computer training for my “real” job all day.  I also want to make sure you gals get your three days in….so we will go Monday, Wednesday, Thursday at 9:10 am instead!!

CLASSES THIS WEEK:

Monday- 5:15 am, 9:10 am

Tuesday- 5:15 am, 4:15 pm, 7:00 pm

Wednesday- 5:15 am, 9:10 am (this week only)

Thursday- 9:10 am, 4:15 pm, 7:00 pm

Friday- 5:15 am

Saturday- 7:30 am

Check out my breakfast/snack for the week….it was easy to make and so healthy!  Yeah me!! I am going to add it to the recipe page (along with a few other recipes I made), but I have to add it here so you don’t miss it!  I got this recipe (with my own little changes because I’m not very good at following directions) from a new website- blondeponytail.com.  You can also thank the blonde ponytail lady for some of the great exercises this week…she’s given me some good tips!!

Veggie Casserole:

1- Spray a 9 x 13 glass dish (if you want to be really healthy use coconut oil..i did not)

2- Throw a bunch of veggies- I used broccoli, peppers, onions, and tomatoes in the dish

3- Mix 10-15 eggs (depends on the amount of veggies you used, enough eggs to almost cover the veggies) with @ 1 cup egg whites

4- Add about ½ cup shredded cheese-for a little flavor

5- Pour mixture on top of veggies

6- Bake at 350 for @ 50 minutes

I cut the dish into about 12 pieces (like big brownies) and put them in Ziploc baggies.  It was great to have a healthy breakfast ready to heat up (one minute in the microwave) each day this week!!  My mom even liked it (she did say that a little salt and pepper would be nice)

 

 

 

Okay….So I have also been talking about that darn Brownie Brittle all week!  Well, I made my own!!  Yeah!!! But, I think the kind at Costco is easier, cleaner, and better for you!  Here is a picture of mine and a picture of the store bought so you know what to look for!!  People are probably wondering why a fitness instructor is pushing sweets, but I am being true to me and honest with you.  I love to indulge once in a while (sometimes more than once in a while) and I think it is important to do just that!!  Everything in moderation!!  It’s okay to have a few bites (just not the whole bag)…that’s why we workout, so we can enjoy the little things!!!
