Beautiful Weekend…She said….Taco Soup


What a beautiful weekend that started out with a much needed trip out to my Grandma’s house in Huntley.  I swear I have the best intentions….”I am going to make it out there at least once a month” (I know, that’s not even the BEST intention, but really all the time I have) and this summer I don’t think I made it out there but once.  That’s terrible!!  So…I figure if I put it in writing here this will hold me accountable for the school year.  The kids LOVE going to Grandma “Blue’s” house…they get to play games with their Nana and Great Grandma and get take out, pizza, mcdonalds, or portillos!!


Saturday was the Cary 5k Shuffle….they had a good turnout….at least 300 participants!  That was awesome!  I wasn’t going to run the race, but got the bug and ran it.  There were a TON of kids that participated in the 5k race and they were kickin’ butt.  I had my sites set on a few people I wanted to catch…I don’t know about you, but there is always that “someone” that I pick out and know that I have to beat-even before the race starts I have that person pegged.  Don’t worry, in some races that “someone” has smoked me, but in others it is the true motivation that I need.  This race I had my sights set on a few and I just couldn’t catch ’em.  Some days you’ve got it, some days you don’t!!  I only half way had it!! 🙂

On another sad note….the girl did not say yes to Homecoming.  However, she did say yes to a hamburger some time at McDonald’s.  Of course, my student handled it great!!  The NO, but YES response led to other discussions and role playing  about how far to press for the “burger at McDonald’s” and should he continue to ask her out or give her some space.  Stay tuned….

Some recipes for the week:

Tortilla Soup (I have been making this for years and made it today…it is a Sunday Bears Game Soup)

1 lb. turkey meat, 1 onion, 2 cans pinto beans (my kids don’t eat them so I leave them out), 1 can corn, 1 can rotel, 2 cans diced tomatoes, 4 cups boiling water, 1 packet taco seasoning, 1 packet dry ranch

1.  Brown meat and onion                                                                                                                                                                             2. Add all cans and water                                                                                                                                                                               3.  Mix taco seasoning                                                                                                                                                                                     4.  Simmer for one hour, then add ranch dressing packet.                                                                                                                      5.  Add salt and pepper to taste!!  ENJOY!!

A few items that might be helpful in the kitchen…I only own the misto sprayer and my mom owns the digital scale.  The mist sprayer is AWSOME for olive oil!  Yes, olive oil is good for you, but we can all get a little carried away with it when it comes pouring out of the container.  The digital scale is a life saver for those things like shaved lunch meat, or anything that says ounces and you aren’t sure how much that is….even a good ol’ burger!!

V.B.  is WINNING!!!  D.C. is SECOND!!!  EVERYONE IS WITHIN TENTHS OF EACH OTHER!!!  There is a lot more time in this challenge and you can still join for $5!!  Some people are choosing not to weigh in until the end or every other week…just make sure you are holding yourself accountable because there is now way for me to tell you where you are in regards to everyone else!!!
